W2K is 20 years old, there is no support for it and it is full of vulnerabilities compared to today's OSes. If you need these servers for legacy purposes to retrieve old data , then I agree they should be virtualised and isolated on their own network which has no connection to the outside world.
If they are seriously being used for production , then they must be upgrade. If they are vital to the business , then it must be done. If they are not, don't worry. You need to seriously make a plan to upgrade these as everyone else has stated.
